Mozzarella Baked Spaghetti
Ingredients: 8 ounces uncooked spaghetti; 1 large eggs; 1/2 cup whole milk; 1/2 pound ground beef; 1/2 pound bulk Italian sausage; 1 small chopped onion; 1/4 cup chopped green pepper; 1 14 oz jar of meatless spaghetti sauce; 1 8 oz can of tomato sauce; 1-2 cups shredded part-skim mozzarella cheese
Pre-heat oven to 350 degrees. Mix eggs, milk and salt in a bowl. Cook spaghetti and drain. Mix spaghetti with egg mixture. Place on a greased baking dish.
Cook beef, sausage, onion, and green peppers on a large skillet. Add spaghetti sauce and tomato sauce.
Bake for 20 minutes, then add cheese. Bake an additional 10 minutes. Wait 10 more minutes before cutting.
Taco Salad Recipe
Ingredients: 1 pound ground beef; 1/4 cup chopped onion; 1/4 cup chopped green pepper; 1 envelope taco seasoning; 1/2 cup water; 1 cup crushed tortilla chips; 1 16 oz can of refried beans; 1 cup shredded cheddar cheese; toppings – chopped tomatoes, chopped lettuce, sliced ripe olives, sour cream, and picante sauce
Cook beef, green pepper, and onion over medium heat. Add taco seasoning and water. Cook until mixture is thick. This will take at least 3 minutes.
Place chips in a greased baking dish. In a separate bowl, add refried beans, then pour over chips. Add the beef mixture on top and add cheese on top of that.
Bake for 15-20 minutes in oven at 375 degrees. Add tomatoes, lettuce, and olives on top. Serve with picante sauce and sour cream.
Italian Stuffed Shells
Ingredients: 1 pound ground beef; 1 cup chopped onion; 1 minced garlic clove; 2 cups hot water; 1 12 oz can of tomato paste; 1 tablespoon beef bouillon granules; 1 1/2 teaspoons dried oregano; 1 large egg; 2 16 oz cups of 4% cottage cheese; 2 cups shredded part-skim mozzarella cheese; 1/2 cup grated Parmesan cheese; 24 cooked and drained jumbo pasta shells
Cook beef, garlic, and onion over medium heat. Add water, tomato paste, bouillon, and oregano after meat is no longer pink. Reduce heat and simmer for 30 minutes.
In separate bowl, mix eggs, cottage cheese, 1 cup mozzarella cheese, and 1 cup Parmesan cheese. Stuff shells with cheese mixture.
Preheat oven to 350 degrees. Place shells on baking dish and pour meat sauce over shells. Bake for 30 minutes, covered. Sprinkle mozzarella cheese and bake another 5 minutes until cheese has melted.
Mediterranean Goat Casserole
