Goat meat is a delicacy in many countries. In the States, it’s not that popular. So when it’s time to prepare a dish containing goat meat, use the following recipes. There’s ground goat meat recipes, goat stew recipes, and goat curry recipes. There’s a list of ingredients for each recipe, along with directions. Good luck.
1. Jamaican Curry Goat – Recipe from African Bites
This recipe is for 6 servings, and it will take 1 hour and 45 minutes to prepare. Here’s a list of ingredients:
3 – 3 1/2 lbs goat meat; 1/4-1/2 cup cooking oil; 2 teaspoon minced garlic; 1 sliced medium onion; 4-5 tablespoon curry powder; 1 teaspoon white pepper; 1-2 teaspoon fresh thyme; 2 sliced green onions; 2-3 medium potatoes; 1 tablespoon tomato paste; 1 scotch bonnet pepper; salt
The goat meat should be cut into chunks and the bonnet pepper can be replaced with a hot pepper.
Start by seasoning the goat meat with salt and pepper. Heat oil over medium heat before adding goat meat. Stir and saute it until brown. Remove the browned bits off the pot by scraping. Afterward, add curry and stir an additional 1-2 minutes.
Add onions, thyme, tomato paste, white pepper, garlic, scallions, and scotch bonnet pepper. Stir for 1 minute.
Add enough water to cover the goat meat. Boil it and simmer until meat is tender (2 hours). Stir pot occasionally and add more water. Add potatoes 15 minutes before removing pot from stove. Adjust thickness of soap by adding water or stock.
2. Grilled Goat Chops with Garlic, Oregano, and Lemon – Recipe from The Splendid Table
This recipe serves 4 to 6, and it takes 2 hours and 25 minutes to prepare. It’s similar to a ground goat meat recipe. Here’s a list of ingredients:
6 large garlic cloves; 1 coarsely chopped medium onion; 1/2 cup + 2 tablespoon extra virgin olive oil; shredded zest of 2 large lemons; juice from 1 large lemon (6 tablespoon); 1/2 cup dry white wine; 4 teaspoons dried oregano; 1/4 teaspoon salt and 1/4 teaspoon freshly ground black pepper; 8 or 9 1-inch thick small rib or loin goat chops
Marinate for 1 1/2-2 hours. Blend lemon juice, wine, garlic, 1/2 cup olive oil, onion, lemon zest, oregano, pepper, and salt. Don’t remove the small pieces of lemon or other ingredients in the mixture. Pour into a large plastic bag or bowl and soak goat meat. Store in refrigerator for 1 1/2-2 hours.
Drain the goat chops, but leave the marinade on the surface. Heat 2 tablespoons of oil under medium heat in a 12-inch saute pan. Arrange the chops so that they don’t touch each other. Use a second pan if all the chops don’t fit. Brown each side of the chop. Cook an additional 2 minutes on each side under medium-low heat. The chops should be pink inside when done.
3. Goat Burgers – Ground Goat Meat Recipe from Shepherd Song Farms
Here is a ground goat meat recipe. You will need the following ingredients:
1 lb ground goat meat; 1 finely chopped medium purple onion; 1 finely chopped small sweet red pepper; 1 finely chopped sweet orange pepper; 1 dash of lemon juice; freshly ground black pepper; sea salt
Preheat grill to medium-high heat. Mix peppers, onions, and ground meat in a large bowl. Make 4 patties from the mixture. Grill the patties and turn them over to cook the other side.
