Preparing goat meat is a simple task given the various recipes that exist for that objective specifically. Below is a simple Zimbabwean goat recipe that is quite easy to prepare. It is called the goat stew potjie with mushrooms. To start with, potjie is the name used to describe a stew cooked in three-legged cast iron pot. The goat stew is quite common. However, each family has its own unique way of preparing it.
- Five hundred grams of goat leg meat. It should be chopped into three centimetre pieces.
- One diced brown onion.
- Four chopped tomatoes.
- Two tablespoons of tomato paste.
- 250 millimetres of red wine.
- Three sliced carrots.
- Five chopped potatoes.
- Four hundred grams of quartered brown mushrooms.
- I thinly sliced red onion.
- One half thinly sliced white cabbage.
- Tow diced tomatoes.
- One cup of medium-grain rice.
- Half a cup peanut butter.
- A handful of parsley leaves for garnishing.
For preparing the goat stew, heat about two tablespoons of oil in a large frying pan. Add the goat and brown it. Transfer it to a pressure cooker but before that, ensure that you scrape the browned bits formed on the base of the pan. Add the onion, tomato, tomato paste, and wine. Seal the pressure cooker and cook for about forty five minutes on high pressure. After that, release the steam and unseal the pressure cooker. Strain the liquid and place the meat in a large saucepan over medium-high heat. Set it aside and keep warm. Add the carrots, potatoes, and mushroom to the liquid in the pan and cook until the vegetables are tender. Add the goat and cook for a few more minutes.
For the cabbage salad, heat about one tablespoon of oil in a frying pan over medium heat. Add the onion and cook until soft. Add the cabbage and tomatoes. Cook for about five minutes and ensure that the tomatoes are soft. Season with salt and pepper. Set that aside and keep it warm.
Finally, for the peanut butter rice, cook the rice in a saucepan until it is fluffy and soft. Add the peanut butter and stir to combine. Warm through over medium heat for about a minute or two. Garnish with the parsley.
Serve the goat stew with the cabbage stew and peanut butter on the side. It is a very simple meal to prepare but is very delicious.
